You rarely find people who haven’t got a thing for pasta. Besides being a nice meal, pasta has a range of health benefits which we may want to consider. Plus, it doubles up as an International cuisine.
Today, We’re All About Pasta!
There has been a lot of debates as to the Origin of Pasta. Many people believe that Marco Polo brought about its discovery in the 13th Century. However, although we cannot trace the history of pasta to Italy some records shows that pasta was consumed in Italy before Marco Polo’s return from one of his trips to China.
Which Country Consumes The Most Pasta?
Italy today, is said to have the second highest per capita consumption of Pasta averaging sixty pounds per person per year as opposed to America’s consumption of twenty pounds per person per year. There is a wide variety of Pasta available in different countries and it’s almost impossible to keep up with them.
Different Types Of Pasta
There are different shapes of Pasta to suit whatever dish is to be prepared. Some of the different types of Pasta we have available are Angel hair, Elbow Macaroni, Farfalle (bow ties), Fettuccine, Jumbo shells, Linguine, Orzo, Pappardelle and Spaghetti amongst several others.
Some Health Benefits Of Pasta
Spaghetti, especially whole wheat is a good source of complex carbohydrates that provides sufficient energy. It contains no Cholesterol and helps stabilise blood sugar thereby preventing Diabetes and Obesity due to its low Glycemic Index. Spaghetti is consists of little fat and also contains essential nutrients like Iron and Folic acid which helps in forming healthy cells, and Vitamin B which is important for boosting immunity. However, spaghetti is not gluten-free therefore, consumption is a problem for people with celiac disease or coeliac disease (a digestive condition), wheat allergies or intolerances.
Our One Pot Spaghetti
It’s interesting because today’s recipe not only incorporates the goodness of Pasta but, also boneless Chicken thighs. That’s a super advantage and I’ll tell you why. You may want to consider the economic aspect of it because a boneless chicken thigh will cook faster than a bone-in chicken thigh. Don’t even get me started on the taste and flavour a chicken thigh has to offer. They contain monounsaturated fat that aid weight loss and reduce cholesterol. That’s really good fat if you ask me.

One Pot Spaghetti

This Easy To Follow One Pot Spaghetti Recipe Is Perfect For Any Season.
500g dried spaghetti
4 pieces chicken thighs – boneless and skinless
1 medium onions – finely chopped
3 garlic cloves – minced
1 tsp powder chilli
1 tsp ground black pepper
200g cherry tomatoes
3 tbsp extra virgin olive oil
1 tsp sea salt or regular salt
2 carrots – peel and chopped
- Parmesan cheese – grated to served
handful fresh parsley – for garnish
1 litre vegetable stock or chicken stock made with two stock cubes
2 tsp fresh or mixed herbs containing: Basil, thyme, marjoram, oregano, and parsley
Separate the bones from the chicken thighs and slice into small pieces. Season the chicken and leave to stand for 15 minutes. You really do not have to go through the process of de-boning the chicken thigh since you can easily get a boneless chicken thigh from a supermarket these days.
Meanwhile, prepare the other ingredients – onion, red pepper and carrots.
Heat three tablespoons of olive oil in a large saucepan that will hold the spaghetti. Add the chicken and stir fry until lightly golden.
Reduce the heat then, add the diced onion, garlic, black pepper, chilli and herbs. Cook for two to three minutes on low heat until they are well incorporated into the chicken.
Now, add a jug of 1 lite of stock then add the pasta, carrots, sweet pepper and tomatoes. Sprinkle some salt and bring to a boil then, reduce the heat. Placed the lid on the sauce pan and cook for 1 hour 15 minutes until the pasta is soft.
Once the water is gone serve with grated Parmesan cheese and garnish with parsley
